My husband, Adam, used to harvest wild rice with a buddy. Since the kids have gotten busier, he no longer harvests the wild rice. We buy the wild rice from a local fella who harvests it in our area so it is organic. Check out Costco for large bags of wild rice if you do not have a local to the wild rice.
We used to give Adam’s wild rice for Christmas gifts along with this recipe. Often, the recipients would share they made the dish for company. It was a big hit!
The bacon comes from Patchwork Farms. This is a local farm with grass-fed pork. The bacon is uncured with no nitrates or nitrates. Also, their pigs are butchered by a Mennonite butcher.
Lots of love goes into raising their hogs!
