Picnics and summer parties can be a little tricky when adhering to a Cancer-Free diet. Rather than choosing not to attend a party due to your diet or not eating at the party, bring a dish that is on your eating plan. The Crowd-Pleasing Asian Salad, lives up to its name AND is healthy for you to eat….bonus! 

This recipe was borrowed from a great book that I stumbled upon: Cancer-Free with Food by Liana Werner-Gray. 

Liana borrowed it from Charlene Bollinger, co-founder or TheTruthAboutCancer.com. This recipe is one of Bollinger’s family favorites! 

Liana points out that the dish is satisfying with its protein from the nuts while the dressing is full of anti-oxidants. 

Total time: 10 minutes

Serves 4

Ingredients:

Salad:

1 head romaine lettuce, cleaned and chopped

 

 

 

 

1 package of organic broccoli coleslaw (or slice your own, 1 cup of cabbage, 1 cup of broccoli stalks, and 1 cup of carrots)

1 red pepper, sliced and diced

4 green onions, chopped

1 cup raw cashews

3/4 cup organic sliced almonds

Dressing:

3/4 cup extra-virgin olive oil

1/3 cup raw apple cider vinegar

1/2 cup raw honey (you may also use grade B maple syrup)

1 teaspoon sea salt

Pinch of fresh ground black pepper to taste

Actions:

  1. In small bow, mix dressing ingredients. Whisk it to make it super smooth.
  2. In large bowl, place salad ingredients. Toss salad dressing ingredients over salad and mix well.

 

Stick salad in your cooler with ice and bring to your next party! I guarantee people will be asking for the recipe.
